Malagasy cuisine and its diversity

 Malagasy cuisine is a diverse and flavorful blend of influences from Southeast Asia, Africa, Oceania, India, China, and Europe. Rice is the staple food of Madagascar, and is typically served with a variety of meats, vegetables, and sauces.


Popular Malagasy dishes include:

  • Romazava: A hearty stew made with zebu (humped cattle), leafy greens, and tomatoes.

  • Vary amin'anana: A simple dish of rice and vegetables, often served with kitoza strips of dried or smoked beef. 

  • Ravitoto: A dish of pounded cassava leaves cooked with meat, seafood, or vegetables.

  • Hen'omby ritra: A slow-cooked beef dish.

  • Masikita: Skewers of grilled meat or seafood, served with achard (a pickled vegetable relish).

  • Koba: A sweet or savory dumpling wrapped in banana leaves, made from rice flour, brown sugar, and grated ground peanuts.

Other popular Malagasy dishes include:

  • Lasary: a side dish or as the filling of a baguette sandwich. It consists of green beans, cabbage, carrots, and onion with a vinaigrette dressing in the highlands. It is created in cities with pickled lemons and mangoes, or grated carrots. 

  • Ranom'ampango or ranovola: A brown drink made of  cooked rice. 

  • Mofo gasy: A sweet bread made with rice flour and sugar fried within a specific mold a typical Malagasy breakfast.

  • Mofo akondro: a sweet and savory fried banana bread. 


Malagasy cuisine is typically served with a variety of condiments, such as achard (a pickled vegetable relish), and sakay (a spicy sauce made with chili peppers).


In addition to the dishes listed above, there are many other regional specialties in Madagascar. For example, in the coastal regions, seafood is more common, while in the highlands, meat and vegetables are more popular.
